- Caramel apple flavor — cinnamon-spiced apples and caramel in every bite.
- Soft snickerdoodle base — soft centers with a cinnamon-sugar coating.
- Homemade apple filling — made with fresh Honeycrisp apples.
- Perfect for fall — warm, cozy, and full of cinnamon.

Don’t Mess This Up
- Cook the apple filling until it has noticeably thickened and the apples are tender.
- Do not skip the cornstarch. It helps the filling thicken instead of staying watery.
- Chop the apples fairly small so they fit neatly in the center of each cookie.
- Bake the cookies for 8 minutes before pressing the centers and adding the filling.
- Press the indentation gently so you create a place for the filling without breaking through the bottom of the cookie.
- Do not overfill the centers.
- Return the filled cookies to the oven for only another 2–3 minutes.
- Let the cookies cool before finishing them with caramel drizzle. This recipe does not use icing or glaze.
What It Should Look Like
Before it goes into the cookies, the apple filling should look thick and spoonable rather than watery, and the apples should be tender. The finished cookies should have a soft snickerdoodle base, visible apple filling in the center, and caramel drizzled over the top.

Make It Your Way
Use a stand mixer, electric hand mixer, or mix by hand with a sturdy wooden spoon or silicone spatula. Whichever method you choose, cream the softened butter and sugar until light and fluffy. Mix the wet ingredients electrically or by hand, then add the dry ingredients on low speed or fold by hand just until the dough comes together. Do not overmix.
Different Size Instructions
This recipe has two tested yield options:
- Mini cookies: 23
- Jumbo cookies: 8
Use the same tested baking sequence for either option: bake at 375°F for 8 minutes, gently press and fill the centers, then bake for another 2–3 minutes. No separate bake times are provided for the two sizes; watch for set edges and soft centers.
Sweet Spot
These cookies bake for 10–11 minutes total. After the first 8 minutes, the edges should be beginning to set while the centers are still soft. Add the apple filling and bake for only 2–3 additional minutes. The finished cookies should have set edges and soft centers. Do not wait for the centers to look completely firm.
Save Some for Later
Store cooled cookies in an airtight container. Because of the apple filling, refrigerate them for longer storage. Let refrigerated cookies sit at room temperature briefly before serving for the softest texture.
The Chaos Test
- Mixer needed? No — use a stand mixer, electric hand mixer, or mix by hand.
- Tested sizes: 23 mini cookies or 8 jumbo cookies.
- Best texture: Set edges with soft centers.
- Longer storage: Refrigerate because of the apple filling.
- Finish: Caramel drizzle only.
